Savory bites:
- Goose duo (Québec-Oie): Foie gras served in a larch cone, with dried goose breast seasoned with dune pepper.
- House-made ham (Boucherie Godin): Pea purée with cider, black garlic duxelles, and bacon powder.
- Braised lamb cromesqui: Elevated with honey and mint labneh.
- Truffled beef tartare: Marinated mushrooms from La Botte and crispy shoestring potatoes.
Sweet bite:
- Apple financier: Made with butter from Cidrerie Bilodeau, Québec saffron and white chocolate ganache, and cider gel.
