Soon after his studies in Hotel Management at the ITHQ, Jean-François became a manager in the hospitality industry. After working as a sales representative at Château Vaudreuil and Fairmont Tremblant, Jean-François worked as a sales manager at several major hotels in the metropolitan area. In 2002, he presented his concept of food recovery from hotels and caterers to leaders of the culinary and hospitality industry; his project then took shape and became La Tablée des Chefs. With this organization, Jean-François hopes to socially mobilize chefs and cooks because he believes in their incredible ability to intervene on the issue of hunger and to address its many challenges.

Catherine Bagdian

Business Development and Marketing Director

Catherine studied Advertising, Promotional Communications & Marketing at the University of Montreal and at the HEC. In the last 12 years, she worked as a fundraising event coordinator and as an event coordinator in the hospitality industry. She joined La Tablée des Chefs in 2010;she collaborates on partnership development and sees that the organization’s projects are funded. Catherine strongly believes in the potential of this cause to become an important link in the food aid chain.

Claude Beausoleil is one of the greatest restaurant owners that Quebec has ever known. After Citrus, Chez l'Épicier and Les Chèvres et le Chou, Mr. Beausoleil, as he is respectfully called in the business, now devotes his heart and soul to La Tablée des Chefs. Mr. Beausoleil assists chefs and supervises volunteers during culinary workshops at our Longueuil and Montreal kitchens. Thanks to his experience, Mr. Beausoleil is of tremendous help when it comes to recruiting Quebec’s top chefs. He is a rare commodity with a golden heart! Curious and passionate, our ambassador will be sharing his culinary tips and his knowledge of fine wines with members of the Brigade Culinaire through short columns on our website. He is always on top of the latest culinary trends!

Yoni Bélanger

A recent drama-teaching graduate from UQAM, Yoni loves working with young people. Having started at La Tablée des Chefs as a facilitator at culinary day camps, she gradually moved away from the Arts to pursue her childhood passion: cooking. Lack of motivation in school and malnutrition are important issues to Yoni. She believes that the Brigade Culinaire project can have a positive impact on adolescents’ lives. Being the project coordinator allows her to ensure its development in Quebec schools.

Viki Brisson-Sylvestre

Viki Brisson-Sylvestre

Culinary Crew Coordinator

A professional cooking graduate, Viki perfected her knowledge working alongside chefs such as Danny St -Pierre, Marc- André Jetté and Patrice Demers. She was also a food stylist for the TV program Les Desserts de Patrice. Her years of experience allowed her to redefine her vision of food and better understand its related challenges. It was through her work in the food service industry that she discovered La Tablée des Chefs and decided to get involved in different activities, such as "The Grande Tablée". Working for La Tablée des Chefs since February 2013, Viki is now in charge of coordinating the Brigade Culinaire and ensuring the smooth running and development of this program. She has the desire to share her knowledge, and to be an active participant in change in order to help young people develop a taste for healthy eating.

Extremely sensitive to the realities surrounding her, Camille was very touched by the mission of La Tablée des Chefs. In her opinion, getting involved in a project that allows families in need to have access to food aid as well as comforting tools is more than rewarding. It is essential for young people to be aware of the importance of good nutrition and to develop food autonomy, which will benefit them throughout their lives. Being passionate about youth and social issues, Camille enrolled in the Bachelor of Social Work program at the University of Montreal in 2013. Camille currently works in communication and food brokerage support. She loves getting involved in the cause and working hard in order to give back to the community.

Véronique was very touched by the mission of La Tablée des Chefs, especially the transferable skills component for underprivileged youth. In 2009, she therefore decided to pursue her career with the organization as Executive Director. She is charge of accounting and human resources, among other duties but also supports Jean-François in his tasks.

Manager of the Culinary Training Component

Eight years ago, passionate about the art of entertaining and great food, François decided to get culinary training. After a few years alongside chef Marc-André Jetté and chef Patrice Demers, a new challenge awaited him: cooking healthy food using local and organic natural ingredients. His involvement with La Tablée des Chefs started when he participated in the organization’s various activities. La Tablée des Chefs became more and more prevalent in his career. Today, François’ role allows him to combine two equally important aspects of his life: his work in the kitchen, and being a citizen with a desire to impart knowledge, to contribute in his own way to improving society for future generations.

Patrick Emedy

Patrick Emedy

Passionate about cooking from a young age, Patrick took his first classes in the kitchens of great French restaurants like the Relais and Chateau Lan Kerellec and Hotel Marinca in Corsica. Before landing in Montreal, he wanted to combine his love of travel and culinary discoveries with his love of sharing; he started giving cooking lessons to students in the Mexican Riviera Maya and worked as a consulting chef in several Brazilian regions. Six months after his arrival in Québec, he discovered La Tablée des Chefs, which allowed him to share his passion with underprivileged youth and the general public. Patrick developed the culinary training component through the Ateliers du Frère Toc and the various programs offered by the organization.

Sylvie-Anne Guertin

Sylvie-Anne Guertin

Sylvie-Anne has over 20 years of experience in the field of administration. She has been working for La Tablée des Chefs since January 2011. She coordinates various training programs, such as culinary workshops for teenagers (formerly Ateliers du Frère Toc) and ‘cook to eat better’. These programs were implemented in various secondary schools, youth centers and other locations across Quebec. Her goal is to improve the culinary skills of today’s youth so that they can manage in the kitchen, and be eager to taste different foods and adopt a healthy diet. As a mother of two teenagers,sharing this knowledge with young people is important to her, as it will be benefit them throughout their entire lives.

It is often said that all roads lead to Rome, but, for Nancy, all roads lead to young people. A graduate of the School of Life where she has worked, at different periodes in her life, as a worker with young offenders in an alternative justice organization, as a volunteer coordinator of the Maison de soins palliatifs de Laval, and as the Director of the Youth Centre of Rosemère, Nancy’s rich, unique and diverse experience is an asset for the team at la Tablée des chefs. Nancy’s goal is to further apply her talent with young people in order to teach them not only social and behavioral values based on self respect and respect for others, but also to influence their life journey with nutritional values advocated by La Tablée des chefs.

Responsible for Business Development

After completing his studies in communications, Luc began a career in television, where he became a director in the field of creative media. Having a great love for nature and the water, he moved to the countryside where he learned the art of recycle and reuse with everything possible. With farmers as neighbors, he quickly realized how the appearance of goods had nothing to do with their taste or nutritional value, and became interested in what use farmers made of their surplus production. After his television career, he joined La Tablée des Chefs, where he contributes to the recovery of surplus food in order to feed people in need.

Humanitarian trips to Guatemala, Tanzania and Brazil have allowed Caroline to raise her own awareness to food waste, as well as to the welfare of others. A recent graduate from HEC Montreal in Sustainable Development and Operations Management and Logistics, and now a MSc student in Environmental Studies at the University of Sherbrooke, Caroline wanted to find meaning and value to her job, By subscribing to the two missions of La Tablée des chefs: to feed and to educate, Caroline has the opportunity to share her passion and her knowledge in the environment. La Tablée des chef also allows her to develop her interest in alimentation and to continue to learn about the culinary field in Quebec.

After studying marketing and spending a few years working in the field, Nathalie decided to change course! Three children later, as a stay-at-home mom, food became very important and later turned into a passion. A few encounters led her to producing video clips for stephanelecuyer.tv and recettes.qc.ca. Her urge to help grew, and in spring 2011, she discovered La Tablée des Chefs; she then swapped her mom’s apron with La Tablée des Chefs’. Her social ambition is to make a difference.

Yvon Tremblay

Yvon Tremblay

Sales Manager

An international chief executive consultant from Chibougamau, Yvon Tremblay became an active member of the Société des Chefs, Cuisiniers et Pâtissiers du Québec (SCCPQ) in 1981. A pioneer in the field of healthy cooking in Quebec, he has written six cookbooks, published by Les Éditions Stanké et Trécarré. He also contributed to the production of Quebec’s first gourmet magazine: Flaveurs (2000 -2010), followed by Brigade magazine (2006-2009) and Pot au Feu magazine (2005-2010). For the past 40 years, Yvon has been traveling around the world as a consulting chef. Ultimately, he joined La Tablée des Chefs to contribute to the cause that is close to his heart: food autonomy. He brings his network in the field of HRI (Hotels, Restaurants and Institutions) to the table. Yvon is also an advocate of promoting Quebec’s products, so that they have an important place on Quebecers’ tables.
